A simple, tasty and satisfying breakfast pita pizza topped with mashed avocado and a fried egg.
This week I was on an avocado bender and I shared some tasty new avocado recipes and reminisced about some of my favourites that I have already written about and I realized that I had not mentioned one of my absolute favourite ways to enjoy avocados and possibly the simplest way, on toast for breakfast. It is so simple with just mashed avocado that is seasoned with a bit of salt, fresh ground pepper and perhaps a bit of lime juice and served on toast and yet it is so good! I recently came across the idea of a breakfast pizza that had an egg in the middle and I thought, wouldn’t it be nice to do a pizza version of avocado on toast except instead of toast use a pita and top it with a fried egg and possibly other toppings? As soon as I had the idea, I knew that I would have to try it and it turned out wonderfully well! I have been enjoying different variations of this avocado breakfast pita pizza all week trying different toppings like bacon or crumbled queso fresco in addition to the already amazing ‘plain’ version. One morning when I had a bit more energy I even went so far as to try a guacamole breakfast pizza with fried egg which was also really really good!
My favourite from all of the experiments had to be the bacon version! It is almost like salty bacon and creamy avocado were made for each other!
Avocado Breakfast Pizza with Fried Egg
Prep Time: 5 minutes Cook Time: 5 minutes Total Time: 10 minutes Servings: 1
A simple, tasty and satisfying breakfast pita pizza topped with mashed avocado and a fried egg.
ingredients
- 1/2 cup avocado, mashed
- 1/2 lime, juice
- salt and pepper to taste
- 1 pita, lightly toasted
- 1 egg, fried
- 1 strip bacon, cut into 1 inch sliced, fried and draind (optional)
- 1 tablespoon queso fresco, crumbled (optional)
directions
- Mix the avocado, lime juice, salt and pepper, spread it on the toasted pita and top with fried egg and other toppings.

I love egg and avacado together. I usually place slices of avacado on top of eggs cooking sunny side up, place lid on top and cook very slowly. I am going to have to try your recipe now – with coconut flour tortillas instead of pita I think. Thanks for all the great recipes!

At first I worried, what would I–being the sole eater in this household–do with an entire pizza for breakfast. Then you mentioned pita! I can manage that. I'm even thinking your toppings on one of those little sandwich thins. Anyway I look at it, you've got a great idea there, Kevin.

I just made this for brunch.. slept a little late today! And it was fantastic! I forgot to pick up a lime at the store, so I used our bottled lemon juice (probably a lil less than a tablespoon, I'm not a big fan of that stuff but I wanted the acidity), and it was still delicious. I didn't have bacon, but that didn't matter. I slapped about a tablespoon of salsa verde on top and went to town. So good! Thanks for the recipe idea!

I really recommendmashed avocado on toast topped with a poached egg, seasoning and grated parmesan cheese. That washed down with a coffee is the absolute bomba!!
