I was making my banana ice cream when it occurred to me the caramelized bananas would be delicious on their own without turning them into ice cream.
And I was right. The cooked bananas are absolutely delicious as they are. If you like bananas foster but are looking for something without the alcohol then this recipe is for you. Quick, easy and on the table in just fifteen minutes.

Ingredients
Bananas: I used medium bananas in this recipe but you can use any size you like. The bananas need to be ripe or they will be sour.
Brown sugar: also called light brown sugar and adds to the lovely caramel flavor of these bananas. You could try using dark brown sugar if you like, or white sugar at a pinch.
Golden syrup: also called light treacle, really adds to the caramel flavor of this recipe. You could use maple syrup or honey instead if you like but this will add these flavors to the final dish.
Butter: because butter makes most things taste better. In this recipe helps with the caramelization of the bananas. You can substitute with margarine to make this vegan.
Nutmeg: ground nutmeg gives a lovely twist to this recipe. You could use cinnamon if you prefer, or leave it out all together.
How to make caramelized bananas
Peel the banana and slice them length ways, then in half.
Heat a frypan to medium high heat. Add the bananas, flat side down a cook for a couple of minutes until brown and cooked on one side.
Add the butter, brown sugar, golden syrup, nutmeg and salt. Gently swirl pan to combine the caramel. Flip the bananas and cook on the other side till golden brown, spooning some of the caramel over the bananas.
Remove from heat and serve immediately.
How to serve
To serve transfer to plate or bowl and eat immediately. Fabulous with some whipped cream or a big scoop of my banana or vanilla ice cream. Delicious!
How to store
Theses caramelized bananas are best eaten immediately after cooking. At a pinch you could put them in an airtight container and store them for up to two days. If you're not ready to eat the straight away you are best to store the ingredients separately until you are ready to cook them.

Ingredients
- 4 medium ripe bananas
- ΒΌ cup (60gms) brown sugar
- 1 tablespoon (20gms) butter or margarine
- 2 tablespoons (40gms) golden syrup or light treacle
- ΒΌ teaspoon ground nutmeg
- 1 pinch salt
Instructions
Peel the bananas and cut them length ways, then in half.
Heat the fry pan on medium high heat.
Add the bananas, flat side down and allow to cook for a couple of minutes.
Add the butter, brown sugar, golden syrup, nutmeg and salt.
Flip the bananas once, giving the pan a gentle swirl to combine the caramel and spoon some of the liquid over the bananas.
Cook for another few minutes until bananas are golden brown and caramelized and cooked through.
Transfer to plates or bowls and serve immediately. Fabulous on its own, with some whipped cream or a scoop of banana or vanilla ice cream. Delicious!
