Anyway, these delicious Mushroom Ramen (or Maggi) Noodles are so easy to make and are perfect for lunch or dinner when you want to have something sinful, something not fully homemade, but still have your personal take on it.

  • saute some onions and garlic in some oil
  • add mushrooms, let cook (in some sesame oil)

  • cook until the mushrooms are completely caramelised

Description

The quickest Mushroom Ramen (or Maggi) Noodles recipe that is so delicious, perfectly tossed in a simple Asian style sauce and so many mushrooms.

Ingredients

Scale

  • 1 tbsp oil
  • 170 grams mushrooms (sliced)
  • 75 grams onions (sliced)
  • 1/2 tbsp garlic (chopped)
  • 1 tbsp sesame oil
  • 1 tbsp hoisin sauce
  • 1 tbsp sriracha sauce (or any other hot sauce)
  • 1/2 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 2 packs maggi or ramen noodles (uncooked & discard the spice pack)
  • 3 cups water
  • salt
  • pepper
  • 1/4 cup spring onions
  • 1 tbsp toasted sesame seeds

Instructions

  1. In a pan, add oil, garlic and onions. Sauté for a few minutes on medium heat until the onions are lightly cooked and the garlic is fragrant.
  2. Add sesame oil and mushrooms. Let cook until the mushrooms are light golden brown in colour.
  3. Add the sriracha, vinegar, soy sauce, hoisin sauce, salt and pepper. Cook for about 2 minutes on medium heat until the mushrooms are caramelised.
  4. Add the uncooked maggi/ ramen noodles and water. Cook on high until the noodles are completely cooked.
  5. Add spring onions and mix well. Cook for additional one minute.
  6. Transfer to serving bowls. Sprinkle some sesame seeds and serve.

      Hi, I dont strain them 🙂 - honestly, there is not much of liquid left in the recipe post cooking so this is not like a soup. Enjoy the recipe.

    I added 3 cups of water and ended up with a soupy dish at the end. I would add two cups and see how that ended.

      Hi Kim, the ramen that I use here in India, call for 1.5 cups of water for every 1 pack - probably different ratio for what you used. Hope you still liked the recipe.

    This was so delicious and can not wait to make this again! The sauce was divine with complex flavors. I added half of the sricha and the spice amount was just right for my husband and kids (I added some extra for me at end :)). Really need to be sure to cook out most of the water after adding the noodles to let the flavors really come through. May want to try this wonderful sauce with beef, broccoli, etc next time.

    This dish is so simple and flavorful. I make my own hoisin sauce with almond butter, palm sugar, soy sauce, rice wine vinegar, sesame oil, sriracha,and garlic because my daughter is vegan and I didn’t know if the store-bought stuff was vegan. Other than that, I followed it exactly. We love it. It is just a tad soupy so we use chopsticks and a spoon to eat it.
